Straight out of our Himalayan Salt Wall Dry Ager. Beautiful marbeling, packed full of flavour and aged to perfection. A really great and different slow cooking or roasting joint. This is the cap that sits above the Rib-Eye Steak Primal. Also known as the Spinalis. All from the Isle of Purbeck. This joint can also be cut into steaks, just cut either side of the butchers string, season and throw them on the pan.
