Our Himalayan Salt Dry-Ageing Room gives our wonderful Purbeck Angus Beef the time and conditions it needs to develop a deeper, richer flavour and beautifully tender texture.

Right here in Wareham, Dorset, we combine traditional butchery with a modern approach to dry ageing — creating beef with real character.

Our beef comes directly from the meadows across from our Farm Shop in the Purbecks and is reared by the Goldsack Family. Our families have been farming and butchering in the Purbecks for generations.

Great Beef - Time - Patience

What makes dry-aged beef so special?

Dry ageing is a process of patience. Rather than rushing beef from butcher to counter, we give selected cuts time to mature in a carefully controlled environment. As the beef ages, moisture gradually leaves the meat and its natural enzymes begin to work. This concentrates the flavour and helps develop a more tender texture. The result is beef with greater depth, richness and complexity — the qualities that make dry-aged steak such a special thing to eat. It’s not about doing more to the beef. It’s about giving great beef the time it deserves.

The Salt Wall

220 Himalayan salt blocks. One very special ageing room.

At the heart of our dry-ageing room is a wall built from 220 blocks of Himalayan salt. The Salt Wall forms part of the carefully controlled environment in which our beef matures, helping us create stable conditions for the ageing process. Combined with carefully managed temperature, humidity, air quality and hygiene, it provides the environment our beef needs to develop naturally over time. And while the technology helps create the conditions, there’s one ingredient we can’t manufacture – Time

How it Works

THE SALT

Our 220-block Himalayan Salt Wall forms the centerpiece of the room and contributes to the environment in which the beef ages.

CONTROL

Temperature and humidity are carefully managed to create consistent conditions for dry ageing.

TIME

Our Purbeck Angus Beef is given time to mature naturally. As moisture leaves the meat, its flavour becomes more concentrated and its texture develops.

THE RESULT

The finished beef has the distinctive character of dry ageing — rich, deep flavour, tenderness and a wonderfully developed texture.

Creating our Salt Wall wasn’t simply a case of putting some salt on a wall. We built a dedicated environment specifically for dry ageing, bringing together the Salt Wall, professional dehumidification and air purification with the experience of our butchers. Every part of the room has a purpose: to create consistent conditions and allow the ageing process to do what it does best.

Our Salt Wall is an extension of that philosophy. It’s our way of bringing something a little different to the traditional butcher’s shop — without losing sight of where we come from.
